Super-Muffins

What a delicious way to eat healthy! This muffin recipe is gluten free and includes himalayan tartary buckwheat which contains powerful antioxidants that can help protect against disease. These antioxidants include quercetin, rutin, and luteolin, which have been shown to have anti-inflammatory and immune-boosting properties. Enjoy this super yummy superfood!

TIP: These delicious and healthy muffins make a great snack or dessert. Pair with green tea for an extra antioxidant and polyphenol boost for cellular health!

DRY INGREDIENTS:

  • 1 cup rolled oats

  • 1 cup almond flour

  • 2/3 cup himalayan tartary buckwheat flour

  • 2 tbsp arrowroot powder

  • 1/3 cup coconut sugar

  • 3/4 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg or pumpkin spice

  • 1/2 tsp sea salt

WET INGREDIENTS:

  • 1 1/2 cup mashed banana (or mashed sweet potato)

  • 1/3 cup avocado or coconut MCT oil

  • 1 tsp apple cider vinegar or lemon juice

  • 1/4 cup non-dairy milk (or water)

  • 1 tsp vanilla extract

TOPPINGS:

  • Have fun with the toppings! You can switch it up by using dark chocolate chips, fresh blueberries, seeds, or nuts, to make an interesting and fun combination of healthy and delicious muffins!

Method:

  • Preheat oven to 375° F

  • In a blender or food processor, blend the dry rolled oats to create a flour.

  • Mix all dry ingredients together

  • Mix all wet ingredients together

  • Combine dry and wet ingredients thoroughly

  • Use Ghee or Coconut oil to grease a muffin pan and fill evenly

  • Bake for 20-25 minutes
